i LOVE cucumbers! What an interesting vegetable. The only one that i know that almost every child loves too. In my experience, every child loves to eat cucumbers. i don’t know about all children, but the one’s i know do!
The taste is subtle and they are made of mostly water. No calories so you can eat as many as you want for a filling snack, appetizer or side dish. They can be cut into chips, perfect for dipping, or lengthwise which are perfect for sandwiches!
my favorite is to add them to my salads. i use so many they are almost the main ingredient. Then i add some carrots, cherry tomatoes, and some purple cabbage, mix in a little balsamic vinaigrette dressing and sit down to a healthy lunch or snack.
